I was perusing recipes online over the summer and found this one for Pepperoni Pizza Puffs. It sounded like a great recipe.
I made it over the summer for my boys and they really liked them.
So last night I was finally able to sit down and watch the
finale to So You Think You Can Dance(I dvr quite a bit) and it came to me to make these for the boys' lunch. They are quick
to put together and take only 25 min to bake.
I thought I would share the recipe with all you mommas out there that, like me, are always in search of new ideas for lunch box meals. I made this the night before, because ladies let's face it, I am not a morning person!! Hard as I try I have not yet successfully entered the "I'm a morning person" club.
This morning I wrapped them in tinfoil so they wouldn't brown up anymore and reheated them for a bit in our toaster oven. I'm sure you could microwave them, but I wanted them still crunchie from the melted cheese. I then popped about 5 of them in my guys' thermoses so they would stay warm. I did not pack sauce but that is up to you. Mine like them with out the sauce too. I hope this gives you a new idea for lunches and puuulease share any you may have.
Pepperoni Pizza Puffs
*3/4 cup flour
*3/4 Tsp baking powder
*1 Tbl Italian seasoning {I used more, about 2-3}
*pinch of salt
*pinch of red pepper flakes {I did about 2 pinches. You can omit}
*3/4 cup of whole milk {I used 2%}
* 1 egg, slightly beaten
*1 cup shredded mozzarella cheese {I used the Weight Watchers moz cheese}
*1/4 cup Parmesan cheese
*1 cup cubed pepperoni {or whatever ingredients you want to add}
*1/2 cup store bought pizza sauce
1. Preheat oven to 375 degrees. Grease a 24 cup mini-muffin tin. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes { if using }. Whisk in the milk and egg. Stir in the Mozzarella, Parmesan and pepperoni; let stand for 10 minutes.
2. Site the batter and divide among the mini-muffin pan. {I sometimes have a few empty holes left}
Bake until puffed and golden 20-25 min.
3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
I will add that the first time I made this I used whole wheat flower. It was OK. I may try it next time with white whole wheat and see how it does. This time I used just white all purpose. I know some of my friends go into anxiety attacks when I tell them to stray from instructions of recipes, but I have no problems making a recipe my own. I think you can really make this recipe your own and add a variety of things. Have fun with it. Happy Back To School!!!
